Chutney powders are the perfect accompaniment to almost all South Indian breakfast dishes. It’s a life saver on those busy mornings, lazy mornings when you don’t have time/mood to prepare chutney. For bachelors / for someone who stays away from home, chutney pudi/powder always tops the ” list of food items to be taken”. Chutney powder is basically a staple condiment like pickles, which can be consumed/mixed with a liberal quantity of ghee/butter/coconut oil/sesame oil/curd and served as an accompaniment with Idli/dosa/ any breakfast varieties. So chutney powder can be called as dry chutney.There are many variations for chutney pudi/powder and each one has a unique taste according to its preparation which varies from home to home and state to state. Here I’m sharing a traditional preparation of chutney powder, an easy to make recipe with simple ingredients, can be prepared in a short time at home. Just try and enjoy!! 

 

 

How to make or prepare chutney powder –

Heat a heavy bottomed kadai by adding 2 tsp of oil in it, add peanut and fry till it turns to golden brown and crisp

Remove it and set aside

In the same oil fry Chana dal, roasted gram one by one separately and set aside

Add 1 tsp of oil fry curry leaves to crisp and set aside

Fry red chilies, garlic cloves, and tamarind

Dry roast sesame seeds till it starts to crackle and set aside

Allow all the ingredients to become cool, in the meantime grate coconut and keep ready

Add the ingredient to a mixer jar and make a coarse powder, divide the ingredients into 2 or 3 batches

Add prepared chutney powder in a bowl, mix grated copra and salt to taste

Heat a tadka pan by adding 1 tsp of oil when it becomes hot add mustard seeds when it begins to crackle add hing and turn off the flame, allow it to cool

Add the prepared tempering to the prepared chutney powder and mix all together properly

Aromatic nutty flavored chutney powder is ready to be served with idli/dosa and also it tastes great with chapati with curd.Transfer it to an airtight container, preserve it for 3 to 4 months.

Groundnut – 1 cup

Roasted gram – 1 cup

Chana dal – 1 cup

Sesame seeds – 2 tbsp

Dry copra – 1 cup grated

Garlic – 1 medium size

Red chilies – 12 no’s(byadgi)

Tamarind – 1 marble size(optional)

Curry leaves – 1 cup

Salt to taste

Oil to fry

Mustard seeds – 1 tsp

Asafoetida – 1 pinch
