Suvarnagadde palyasuran stir fry/Elephant Yam Stir Fry step by step photo recipe. Tasty stir fry made with mild spices goes good as a side dish for rice, served with sambar. Ingredients:

Elephant yam – 1/4 kg

Chilly powder – 1 Tsp

Turmeric – 1/4 Tsp

Cumin powder – 1/2 tsp

Coriander powder – 1 tsp to 1 1/2 tsp

Salt to taste

For tempering –

Oil – 2 to 3 tbs

Mustard – 1/2 Tsp

asafoetida – 1 pinch (powdered)

Curry leaves – 2 springs

Method:

Peel the yam and chop it into thin pieces, immerse in salt water and keep aside for 10 mins.

Boil the yam in plain water till it is cooked. It takes approximately 10 minutes to cook on medium flame. Then strain the water with a colander, (take care don’t cook until mushy).

Sprinkle salt, turmeric, cumin, chilly powder, coriander powder, toss it well so that it gets coated uniformly to the cooked yam.

Heat a pan with oil in it, when it is hot add mustard allow it to sizzle, then add asafoetida and curry leaves allow it to splutter, add yam, toss it well.

Yam stir fry is ready to be served. Enjoy as a side dish for roti or rice.
