Winter melon curry I Ash-gourd coconut curry recipe

 

 

 

 

 

 

 

 

 

Some days we crave for something very simple yet something that is very comforting food. Ash-gourd or winter melon curry is a delicious curry which is easy to make and taste great when served with rice, it is a typical Mangalore style curry, this curry is one of my favorite curry, which is served in many occasions and also served in temples as a side dish.

Preparation time –  15 min

Cooking time – 10 min

Serves – 4

Ingredients –

To cook –

Ash gourd – 500 gm

Salt to taste

To grind –

Coconut – 1 cup grated

Coriander – 1 tsp

Green chilies – 1-2 (adjust to your taste)

Curd/yogurt – 2-3 tbs

For tempering –

Coconut oil – 1 tbs

Mustard – 1/2 tsp

Curry leaves – 2 springs

Dry red chilly – 1-2 no’s

Method –

To make or to prepare Ash gourd coconut curry –

Remove the skin of the ash gourd cut it into medium pieces and immerse in water, pressure cook it by adding 1 cup of water and salt to taste for 1 whistle and keep it ready.

To grind –

Dry roast coriander in a pan, Add coconut, roasted coriander and green chilly in a mixer jar and grind it to a fine paste by adding water,

Finally add curd/yogurt and grind altogether for a min and keep ready.

Ensure that veggie is cooked, then add grounded paste into it

Combine it, (add water to your consistency, always prefer the consistency of the curry must be medium thick in consistency) bring it to boil for 3-4 min, stir occasionally before it is done.

Check the taste, add salt if necessary. Turn off the flame.

Heat a tadka pan by adding coconut oil in it, when it is hot add mustard seeds allow it to sizzle in oil, add curry leaves and red chilly and remove from the flame.

Add prepared tempering into the curry and stir with the curry

That’s it Mangalore style ash gourd coconut curry is ready to serve.

Transfer the dish to a serving dish and enjoy it as a side dish fro boiled rice/steamed rice.

Note –

Combine the curry to your consistency, if you want to serve as a side dish with other curries add less water or add more coconut and grind it with yogurt.. to have it with rice.

Adding coconut oil gives a perfect and delicious taste to the curry.
