Veggie Burger

Burger is all time favorite snack for all kids, mixed vegetable patties can be made easily at home with simple ingredients, flavored with simple spices stuffed in a burger bun with mayonnaise, tomato, onion, cucumber and cheese slices makes a yummy Veggie Burger, easy to prepare and incredibly delicious.
Ingredients:
To make patties –
Potato – 3 medium
Carrot – 1/2 cup chopped finely
French beans – 1/2 cup chopped
Sweet corn – 1/4 cup
Onion – 1/2 cup chopped
Coriander – 1 or 2 tbs chopped
Breadcrumbs – 1/2 cup
Pepper powder – 1/2 tsp
Chaat masala – 2 pinch
Salt to taste
Oil to shallow fry
For batter –
Maida (all purpose flour ) – 2 tbsp
Other ingredients –
Burger buns – 4 no’s
Lettuce – few leaves
Mayyonisse – 1/4 cup
Onion, tomato, cucumber slices
Cheese slices – 4 no’s
Breadcrumbs – 1/4 cup for binding

Method:
Pressure cook potatoes, peel the skin, mash it well. keep all the other ingredients handy. Add veggies, mashed potatoes, chopped coriander, onion, pepper powder, chaat masala and add salt to taste, add bread crumbs mix well and set aside.
Add all purpose flour (maida) and corn flour in a bowl, add 5 tbsp of water, mix to a thin batter as there in no lumps in it and set aside.
Make equal size ball with the prepared mixture, heat a shallow pan, add 1 tbs of oil in it, when it is hot, flatten the ball into patties, dip it in the prepared batter, coat it with breadcrumbs as the patty gets coated evenly.
Shallow fry on both sides in a medium flame until it turns golden brown and crisp.
You can fry 2 or 3 patties together depending on the size of your pan. Once done, drain it on a paper napkin to remove excess oil.
To assemble burger –
Slice burger buns to two halves spread some butter, toast it (optional) take a portion of the bun, apply mayonnaise, place rinsed chopped lettuce, place the prepared veg patty, onion, tomato, cucumber slice, and a cheese slice over it, apply mayonnaise to another portion of the bun, cover it. Pin it with a tooth pick with a cheery fruit.
Serve hot with tomato ketchup

Note –
You can add any of your favorites veggies of your choice, blanch chopped vegetables.
To make patty mixture you can also blanch chopped vegetables, drain it in a colander, pat it dry or you can add finely chopped veggies directly in preparation as it gets done once shallow fried in a medium low flame.
