Vegetable upma or Uppittu

Upma or uppittu is a common South Indian popular Karnataka breakfast dish. Rava uppittu is one of the commonly made in almost all South Indian houses. Either for breakfast or evening snack. Quick and quite easy to prepare with lot of different recipes. It is nutritious, tasty. It is prepared by cooking roasted rava with mixed vegetables and other spices, which make it simply irresistible.

Preparation time – 10 min

Cooking time – 15 min

Serves – 4

Ingredients :

Medium Rava – 1 1/2 Cup

Avarekalu(Tender Indian beans) – 1 cup

Mixed vegetables (carrot, beans, cabbage) – 1cup

Onion – 2 nos ( chopped)

Tomato – 1 no ( chopped)

Mustard seeds – 1/4 tsp

Chana dal – 1 tsp

Cashew nuts – 25 gms

Green chilies – 3 to 4 nos (chopped)

Curry leaves – 3 springs

Coriander leaves – 1 bunch ( chopped)

Grated coconut – 1 cup

Turmeric powder – 1 tsp

Salt to taste

Oil to fry

Ghee – 1 tbs

Procedure :

Heat a kadai add one table spoon of oil and fry rava to golden brown in colour and keep aside.

Pressure cook avarekalu(Tender Indian beans) for one or two whistle by adding water and keep aside.In a kadai add oil, when it becomes hot add mustard seeds, when it begins to crackle add chana dal, and cashewnuts, fry till golden brown in colour.

Add Curry leaves, green chillies, coriander leaves, fry for a while.

Add chopped onion, saute for a minute, add tomato, mixed vegetables including cooked avarekalu (Tender Indian beans) fry till it gets half cooked,

Add turmeric powder, salt to taste, water 1: 3 (1 rava : 3 water) bring it to boil, when it begins to boil add roasted rava slowly and mix gently so that there is no lumps.

Close the lid of Kadai, cook in a low flame for 5 to 8 minutes. Mix altogether add grated coconut. Once done add 2 tsp of Ghee, fluff it once again.Turn off the flame. Rest it for 5 min before you serve.

Transfer it to the serving bowl.
