Vegetable Rice vermicelli I Vegetable Shavige Bhath

Vegetable rice vermicelli makes a light, filling and an easy to make breakfast recipe. Shavige bath/Vermicelli Upma is a famous traditional dish of Karnataka. A simple and delicious breakfast dish prepared with mixed vegetables, onions and cashew nuts, It is rich in carbohydrates and vitamins, a healthy breakfast and a light breakfast. 

Ingredients:

Rice vermicelli – 2 cup

Mustard – 1/2 Tsp

Urad Dal – 1/2 Tsp

Chana Dal – 1/2 Tsp

Cashew nut – 2 tbs

Green chilies – 2 or 3 chopped

Curry leaves – 2 springs

Coriander – 1 bunch chopped

Ginger – 1 inch peeled and grated

Vegetables – carrot, french beans, chopped finely

Green peas – 2 or 3 tbs (frozen)

Onion – 1 or 2 chopped finely (optional)

Turmeric – 1/4 tsp

Coconut – 1/4 cup grated (optional)

Lemon – 1 tsp

Salt to taste

Oil to fry

 

Method:

Boil 4 cups of water and add the rice sevai along with 1/4 tsp salt and 1 tsp oil. Once the Vermicelli/sevai is cooked (it should be just soft and not mushy), turn off heat, pour into a colander to drain completely and keep aside. (read the instruction on the pack to cook the vermicelli)

Heat a heavy bottomed pan with oil in it, when it is hot add mustard allow it to splutter, then add cashew nut fry until light brown, add green chilies, curry leaves, grated ginger saute for few secs then add onion saute until the raw smell goes the add vegetables stir, cook covered for 5 min till vegetables become soft/cooked.

Add salt to taste and turmeric, stir

Add cooked and drained rice vermicelli to it, mix gently cook for few mins on a low flame covered then switch off the flame.

Add grated coconut, chopped coriander and lemon juice toss once again gently
