Vegetable bonda recipe

Vegetable Bonda is a popular South Indian snack prepared with potatoes and mixed vegetables. Ingredients –
Cooked and mashed patato – 4 medium size
Finely chopped mixed vegetables – 1 bowl ( carrot,cabbage,beans, green peas)
Onion – 2 medium chopped
Green chillies – 4 no’s
Curry leaves – 2 spring chopped
Coriander leaves – 1 bunch chopped
Mustard seeds – 1 tsp
Cashew nut – 1/2 cup broken into small pieces
Chana dal – 1 tsp
Turmeric powder – 1/2 tsp
Salt to taste
Oil to fry
For batter –
Besan/gram flour – 1 cup
Chilly powder – 1 tsp
Salt to taste
Cooking soda – 1 pinch
Oil for deep frying.
How to make Vegetable bonda –
Heat oil in a kadai add mustard seeds when it begin to crackle add channa dal and cashew nut,fry till golden brown in colour,add curry leaves and chopped green chillies fry for a while,add chopped onion
Fry onion for a while add chopped vegetables stir fry ,cook in a low flame and close the lid of the kadai for 3 min
when vegetables are cooked/done add mashed potatoes
add turmeric powder and salt to taste mix all together ,allow it to cool
Take a mixing bowl add gram flour, chilly powder,salt and a pinch of cooking soda and prepare a batter by adding water to idli batter consistency with no lumps in it.
Heat oil for frying. Make small balls from the prepared vegetable mixture. sides and fry until golden.
Dip the balls one by one in the batter .
the batter and drop it in oil.
Turn both the sides and fry until golden.
Vegetable bonda is ready to be served
