Vegetable Akki rotti I Veg Rice flour Roti

Akki rotti is a popular dish of Karnataka, there are different varieties of akki rotti’s, Vegetable masala akki rotti is a healthy and delicious akki rotti prepared with grated vegetables,  Some dishes never fail to bore you .. though you are eating from ages, it is always considered a favorite, Its so addictive, delicious and healthy. Akki rotti is a rice-based breakfast item unique to the state of Karnataka, India. Akki rotti means “rice bread” in the native language, Kannada. It is made of rice flour which is mixed with salt and water and kneaded well till the dough gets soft.

Ingredients:

Rice flour – 500 gm

Water – 200 ml as needed

Cumin – 1 1/2 Tsp

Sesame seeds – 1 tsp

Green chilies – 3 or 4 no’s chopped

Onion – 3 medium chopped finely

Grated vegetables – carrot, cabbage, Knol khol, cucumber – 1 cup each

Coriander – 1/2 cup chopped finely

Fresh methi or Dill leaves – 1/2 cup chopped (optional)

Salt to taste

Method:

Heat water in a vessel, bring it to boil.

Transfer rice flour to a bowl, add grated veggies, cumin, sesame, chopped chilies, coriander, (fresh methi/Dill leaves) and salt, Mix it properly.

Add hot water, little by little in the mixture as needed, mix it with a spatula

Knead it to a soft dough, it should be softer than chapati dough.

Divide the dough into an equal sized ball. Place a parchment sheet/banana leaf on a flat surface and grease it with oil, Heat the griddle, when it ready take the parchment sheet with flattened akki rotti in your hand flip and place it on the flat pan, slowly peel and separate the sheet from the flattened akki rotti. Another method-    grease a flat pan grease it with oil, Take one dough ball place it on the center of the pan, wet your fingers and pat evenly to a thin circle. Heat the pan, drizzle oil on it.

Cover the lid and cook until the bottom gets golden brown and crisp for 2 to 3 min.

Remove the lid, flip it to another side and continue to cook for 2 min.

Transfer it to a plate, serve hot, drizzle ghee/ butter to enhance the taste and enjoy with  Coconut, Peanut chutney or Chana Dal chutney.
