Veg spring roll

Veg spring rolls are popular starter or snack that is served in Indo Chinese restaurants, easy to make and one of the delicious, crispy spring rolls, a perfect tea time snack made with mixed vegetables and grated cheese, makes a delicious stuffing, then stuffed inside spring roll pastry sheets, rolled and deep fried until crisp. An easy to make party snack in a short time.
Ingredients:
Cabbage – 1 cup finely chopped
Carrot – 1/2 cup
Capsicum – 1/2 cup
French beans – 1/2 cup
Green peas – 1/4 cup (frozen)
Spring onion – 1/4 cup
Onion – 3/4 cup
Garlic – 1 tsp minced
Mozzarella cheese – 1/2 cup grated
Pepper powder – 3/4 tsp (adjust to your taste)
Garam masala powder – 1 pinch (optional)
Coriander – small bunch chopped finely
Soy sauce – 1 tsp
vinegar – 1/4 tsp
Salt
Oil – 2 tbs
Pastry sheet /spring roll wrappers – 10 no’s
Maida (all purpose flour) – 1 tsp mixed with 2 tsp of water for binding.
Method:
Chop all the veggies finely immerse in water, drain the water in it and keep all the ingredients handy.
Heat a shallow pan by adding oil in it, when it is hot add minced garlic init, fry until raw smell goes from it, add chopped onion fry until it turns translucent.
Add carrot and beans saute for a 1 min, then add all the veggies saute
Add soy sauce and vinegar mix properly, remove from the flame
Add pepper powder and chopped coriander toss it well
Add grated cheese, toss it gently. allow the mixture to cool.
Once the stuffing is ready/cooled, mix all purpose flour with little water and keep ready.
Follow the instruction given on the pastry sheet, spread one wrapper, spread 1 tbs of stuffing, roll one edge towards the inner side covering the stuffing,
bring the sides to the center , roll the remaining edge,
brush with binding mixture, seal it, follow the same for the rest.
Keep them covered until you deep fry them. Heat oil in a pan, when it is hot enough
To check drop a small piece of wrapper if it comes/rises in oil drop one by one rolls gently, Fry until it turns golden brown and crisp, fry evenly by stirring.
Drain them on a kitchen tissue, continue the same for the rest in batches.
Serve hot with you favorite sauce.

Note –
You can also preserve the prepared roll in refrigerator (freezer) covered /in an airtight container, which you can deep fry them when ever needed.
