Veg Schezwan Fried Rice

Schezwan fried rice recipe – a veg fried rice recipe from Indo Chinese cuisine and quite popular on the restaurant menus.  A spicy rice dish made with “Schezwan Sauce” which gives a spicy chili-garlic flavor to the dish. It is mildly hot and flavored rice dish with a unique blend of sauces.

Ingredients:

To make Schezwan Sauce –

Dried Chili – 1 cup

Oil – 3 tbs

Garlic – 2 tbs peeled and chopped

Ginger – 2 tbs chopped

Tomato sauce – 2 tbs

Red chilli sauce – 2 tbs

Soy sauce – 1 tbs

Vinegar – 1 tbs

Pepper powder – 1/4 tsp

Sugar – 2 Tsp

Salt to taste

Water – 2 tbs to 3 tbs

To make Schezwan fried rice –

Basmati rice – 2 cup

Garlic – 6 pods peeled and chopped finely

Onion – 3 medium chopped

Mixed veggies – carrot, cabbage, capsicum, French beans, spring onion 1/2 cup each

Pepper powder – 1/2 Tsp

Schezwan Sauce – 1/2 cup 

Salt to taste

Ajinomoto – 1/2 tsp (Optional)

 

Method:

To Make Schezwan Sauce –

Soak dried red chilis in hot water for 30 minutes or till they turn soft. discard the water and blend to smooth paste adding water if required. keep aside, now in a large kadhai, heat ¼ cup oil. saute in ¼ cup garlic and 2 tbsp ginger for a minute for 2. Furthermore, add in prepared red chili paste, saute for 2 minutes, so that chili gets cooked well. now add ¼ cup water and adjust consistency. Cover and simmer for 15 minutes, make sure to cook the sauce until oil floats on top, furthermore add ½ tsp pepper, 1 tbsp vinegar, 1 tbsp soy sauce, 2 tbsp tomato sauce, 1 tbsp sugar and salt to taste. Mix well making sure everything is combined well. finally, serve schezwan sauce as a dip with chips or fries or for the preparation of Schezwan rice/Noodles.

To make Schezwan rice –

Rinse rice, soak it for 25 min, then drain the water and keep ready. Boil 6 cups of water in a vessel with salt and a teaspoon of oil, add soaked and drained rice into it, cook it on a medium flame without a lid. when rice just cooked, switch off the flame, strain it with a colander. Allow it to cool completely.

Heat a heavy bottomed pan, add oil to it, when it is hot, add chopped garlic, saute for a min, then add onion,   chopped veggies,

stir-fry on a high flame, when the veggies becomes soft/light brown

Add 1/2 cup of schezwan sauce, give a nice stir

Add rice into it, toss it well, add pepper powder and Ajinomoto

Toss it well.

Schezwan rice is ready to serve.
