Uchellu chutney I Niger seeds chutney
Uchellu chutney is a traditional combination for Ragi rotti/Ragi dosa. An easy to make chutney with simple ingredients. Niger seeds is similar to black cumin seeds but are soft and slippery, similar to sesame with unique taste, a protein rich seeds, It is an essential ingredient in most curries like Yengai– Masala stuffed in Egg plant/Brinjal, traditional curries like Kappavare saaru
Ingredients:
Uchellu/Niger seeds – 1/4 cup
Coconut – 2 tbs grated (optional)
Dry chilies – 2 no’s
Garlic – 3 – 4 cloves
Tamarind – small piece
Jaggery – 1 or 2 tsp powdered (optional, adjust to your taste)
Salt
Method:
Heat a pan, when it is hot add niger seeds in it, fry it in a medium flame until it starts it splutter,
Once the seeds begins to pop, remove from the flame, add garlic pods, dry chilies in it, allow it to cool, when it is ready, add grated coconut, roasted niger seeds, chilies, garlic pods, tamarind, jaggery and salt
Blend it to chutney by adding enough water to blend.
Enjoy with Ragi rotti’s/ragi dosa or Akki rotti / with any breakfast dishes.
