Paniyaram is one of the breakfast dishes in South Indian homes. Three fruit Paniyaram is an authentic south Indian recipe made with seasonal fruits like jack-fruit, banana and mango which is easily available in the summer season, this is an instant Paniyaram recipe made with simple ingredients. The natural flavour of fruits makes the dish delicious and flavourful. Sure give it a try and enjoy with your family.     

Ingredients:

Jack-fruit – 4 or 5 no’s

Mango – 1

Banana – 2 or 3 no’s

Wheat flour – 3/4 cup

Rice flour – 3/4 cup

Rava (semolina) – 3/4 cup

Jaggery – 3/4 cup powdered adjust to your taste

Coconut – 1/2 cup grated

Cardamom powder – 1/4 tsp (optional)

Salt – 1 pinch

Oil/ghee to fry

Method:

Always choose ripe fruits to make this recipe, remove the seed from the fruits, peel the banana, transfer it to a blender, blend it to a smooth puree,

Sieve wheat flour, rice flour, add it to a bowl/vessel, add Rava, jaggery, mix it to a batter, add water as needed to Idly batter consistency, make a smooth batter without any lumps, add blended fruit puree, mix well, add grated coconut.

Heat the paniyaram pan, brush it with oil/ghee, add 1/4 tsp ghee/oil in each mould and pour the batter. Cover with a lid and cook on low heat till the bottom layer is fully cooked and becomes crisp.

Flip and cook the other side until done. continue the same for the remaining batter. (As we are adding fresh fruits. If you set the batter, it will become frothy and may not be good).
