Sweet corn paratha

Sweet corn paratha’s made with whole wheat flour, for stuffing fresh sweet corn is spiced with mild spices.. its a healthy and tasty paratha’s, best to served with curd or pickle, makes a great breakfast or dinner dish, which can be prepared in a short time with simple ingredients, a kids friendly recipe, the health benefits of sweet corn are tremendous and a diet rich sweet corn is loaded with multi nutrients, contains lot of vitamins, fiber and a delicious vegetable. Do include sweet corn in your daily diet for more health benefits to stay healthy.

Ingredients:

To prepare dough –

Whole Wheat flour – 2 cup

Water to knead

Salt

Oil – 1 tsp

For Stuffing –

Fresh sweet corn – 200 gm

Cumin – 1/4 tsp

Onion – 2 no’s chopped finely

Ginger grated – 1/4 tsp or ginger garlic paste

Coriander – 1/4 cup chopped

Garam masala powder – 1/4 tsp

Dry mango powder – 1/4 tsp

Chili powder – 1/4 tsp or chopped green chilies

Salt to taste

Oil – 2 tbs

 

Method:

Add whole wheat in a bowl, add salt, add little by little water and knead it to a dough, once done add 1 or 2 tsp of oil and knead it for 5 to 6 min nicely and set aside covered for 15 min.

Rinse sweet corn, drain the water, pat dry with a cotton cloth. Transfer it to a mixer jar, blend it to a coarse paste without adding water to it and keep ready.

Heat a pan by adding oil in it, when it is hot add cumin, allow it to splutter add chopped onion, fry until translucent add ginger garlic paste, fry until you get a nice aroma, add dry spice powders, saute it well add coarsely blended corn mixture into it, add salt to taste, chopped coriander, mix well, cook covered for 2 min, remove from the flame.

Allow the mixture to cool,

Once the stuffing gets cooled, divide it to a lemon sized equal size ball, Knead the dough for some more seconds , Take a medium size ball little bigger than the stuffing ball,

Dust the flour on a rolling pad, flatten it to a small circular shape, place the stuffing on the center of it,

Seal by gathering the edges , Flatten it using hand and roll into 6 inch diameter circle. Use dry flour to make rolling easy. Heat a tawa, when it is hot place the rolled paratha on it,

Fry the paratha on hot tawa, apply oil/butter/ghee on both side,

Fry until the base of the paratha’s  becomes golden brown. Repeat the same process for rest of the paratha’s.

Enjoy Sweet corn paratha’s with thick yogurt (sprinkle a pinch of chaat masala powder,cumin powder, chilly powder and salt) or accompany it with pickle.
