Sweet Boondi recipe

Boondi is a fried snack made from gram flour. You need a special boondi ladle or a slotted spoon for making boondi. Sweet boondi is a perfect sweet to offer God and to distribute among friends and relatives during Diwali or for any special occasions. Sweet boondi is a popular prasad.
Preparation time – 15 min
Cooking time – 30 min
Makes – 750 gm of Sweet Boondi
Ingredients –
Fresh gram flour – 1 cup
Milk – 3/4 cup
Sugar – 1 cup
Ghee – 2 tbs (melted)
Turmeric powder – 1/2 tsp
Cashew nut – 2 tbs (broken into small pieces)
Raisins – 2 tbs
Almond – 2 tbs chopped
Cardamom powder – 1/4 tsp
Rose essence – Few drops
Method –
To make or to prepare Laddu –
Sieve the flour, add gram flour, turmeric powder in a bowl mix, Add little milk at a time and stir until all lumps gets dissolved. Add melted ghee (cooled at room temperature). Whisk the batter until it gets pouring consistency (for making batter from 1 cup gram flour i have used 3/4 cup of milk). Keep it aside for 10 minutes.
How to make sugar syrup:
Take sugar in any utensil and add 1/2 cup water into it. Heat it in a medium flame. Stir
Let the sugar melt completely. After sugar gets dissolved, cook for 3-4 more minutes and then check. Take 1-2 drops of syrup in a bowl, make it cool down and check with help of your thumb and forefinger. It should have one thread consistency.
Add few drops of rose essence and switch of the flame, close the lid of the pan. (so that the syrup remains hot). Sugar syrup for laddu is ready .
Take oil in a pan and place it on a medium flame for heating. when oil is hot, Stir the gram flour mixture for one more time nicely. Place the slotted spoon 6-7 inch above the pan and pour gram flour batter on top of it with help of a ladle,(keep moving the spoon in a circular motion) so that the mixture falls in hot oil, cook in a medium flame. Stir for 2 min.
Make a low flame and remove it with a slatted spoon. Drain the oil in it.
Put it directly into sugar syrup.(Once you add prepared boondi into sugar syrup,close the lid of it, so that the sugar syrup remains warm) Continue the same procedure for rest of the batter.
Roast dry fruits in 2 tbs of ghee till it turns to golden brown in colour. Once you add boondi in the syrup, mix roasted nuts, and cardamom powder, mix all ingredients.
Soak the boondi in syrup for 30 min. Boondi will absorb syrup.
Store it in an airtight container and enjoy your homemade sweet boondi.
Note – Batter consistency is very important to get perfect round boondis.So be very careful while adding milk. The milk must be boiled and cooled at room temperature.
The consistency of the batter should be like dosa batter consistency.
It can be preserved for a week at room temperature by transferring it to an air tight container.
