Surli poori or how to make sweet poori roll

Surli poori is one of a traditional sweet dish. A healthy and tasty sweet dish. Deep fried poori is dipped in sugar syrup, a mixture is prepared by adding jaggery, dry copra, roasted poppy seeds, roasted gram powder, stuffed inside the poori and rolled, which tastes very delicious, An easy to make recipe for any occasion.

Preparation time – 10 min

Cooking time – 15 min

Serves – 5 to 6

Ingredients for poori :

Wheat flour – 500 gms

All purpose flour (maida) – 1 cup

Chiroti rava – 1 small cup

Orange food colour – 2 drops

Pinch of salt

Procedure for preparation of poori: 

Mix all the above ingredients similar to poori / chapathi dough, rest it for 30 min.

Ingredients for sugar syrup:

Sugar – 1 cup

Cardamom – 4 nos powdered or few drops of rose essence

Procedure for sugar syrup:

Take a pan add sugar and a cup of water, bring it to boil,until the sugar dissolves completely, remove from the flame, add powdered elachi in it and keep ready.

Ingredients for stuffing –

Roasted gram – 1 cup

Copra(dry coconut) – 1 cup (grated)

Jaggery – 1 cup ( powdered)(adjust to your taste)

Poppy seeds – 1 tbs (dry roasted)

Clove – 15 no’s (to pin the stuffed poori’s)

Procedure to prepare the mixture:

Add roasted gram in a mixer jar, make a fine powder, add it to a bowl, add jaggery, grated copra, roasted poppy seeds, mix together and keep aside.

Procedure for preparation of Surli poori :

Heat oil in a kadai, for deep frying the poori, in a medium flame. Divide the prepared dough into small balls and roll it to a circular shape, of desired size poori, deep fry it to golden brown in colour.

Remove the poori with the help of a slotted spoon, drain excess oil in it and dip it in the sugar syrup on both sides of the poori. Do not dip the poori for a long time, just dip and remove it immediately.

Then place it on a plate and sprinkle the prepared mixture all over it.

Roll it and pin with a clove as shown in the picture. Repeat the same procedure for the remaining poori also.

Surli poori is ready to be served.
