Sprouted whole moth bean curry recipe I Madke kalu gojju

Sprouted whole moth bean curry is a healthy and delicious curry to accompany rice or Rotis. It is a coconut-based curry with aromatic spices, which is delicious and easy to make a recipe. One of the healthy and nutritious curries made in a short time with simple ingredients.
Ingredients:
Sprouted whole moth beans (Madke kalu) – 1 cup
Mustard – 1/2 tsp
Curry leaves – 1 spring
Onion – 2 medium chopped
Tomato – 2 medium chopped
Salt to taste
Oil to fry
To grind –
Coconut – 1/2 cup
Onion – 1 small (optional)
Garlic – 3 or 4 pods
Ginger – 1/2 inch
Clove – 3 no’s
Cinnamon – 1 small stick
Coriander – 1 tbs
Chilly powder – 1 tsp or 1 1/2 tsp
Turmeric – 1/4 tsp
Method:
To make sprouts – Soak whole Moth beans ( (Madke-kalu) overnight for 8 to 10 hrs, next day, drain the water completely, wrap it tightly in a cotton cloth, keep it in a warm place for 8 to 10 hrs.
Keep all the ingredients handy. Heat a pressure cooker pan/ heavy bottomed vessel, add oil in it, when it is hot, add mustard, allow it to sizzle, then add curry leaves and onion, fry until translucent.
Add chopped tomatoes, saute until it becomes soft.
Now add cleaned and rinsed sprouted /soaked whole moth beans (Madke Kalu) saute for 3 to 5 mins. add salt to taste.
Add all the ingredients to grind in a mixer jar, blend it to a smooth paste. add the blended paste
Saute well for few mins on a medium flame.
Add 2 cups of water/ add water to adjust to your consistency. Pressure cook for 2 whistles/boil until done.
Boil until a thick gravy consistency (not watery).
Serve with Rotis /rice.
