Sprouted moong dal curry recipe

Lentils (dal) are an important part of our daily food. If we make it differently everyday for a change it tastes much better. Lentils are high on protein and carbohydrates, but the sprouts increase its nutrition,contains more vitamins.Today we will prepare Sprouted Moong Dal Curry in south Indian style.It is a simple and easy to make recipe which goes well with rice or roti.This is one of a traditional south Indian curry.

Serves – 4
Ingredients –
Sprouted moong dal – 200 gm
Potato – 2 medium cut into cubes
Brinjal/egg plant – 2 medium cut into medium pieces
Onion – 1 medium chopped
Curry leaves – 2 springs
Mustard seeds – 1/2 tsp
Salt to taste
Oil to fry.
Ingredients to grind –
Coconut – 1 cup grated
Onion – 1 small cut into cubes
Poppy seeds – 1/2 tsp
Roasted gram – 2 tsp
Coriander leaves – 1 bunch
Samber powder – 1 tbs
Tomato – 1 medium
Turmeric powder – 1/2 tsp
How to make sprouted moong curry.
Take a mixer jar add all the ingredients to grind except tomato ,grind to a paste by adding water.
When the masala is done finally add tomato and grind to make a paste and keep it ready.
Heat a pressure cooker pan by adding 1 tbs of oil in it when it is hot add mustard seeds when it starts to crackle add curry leaves and chopped onion fry till onion turns to translucent
Add sprouted moong dal and fry for a while till the raw smell evaporates,add potato and brinjal fry for a while add grounded masala paste.
Mix the grounded masala,fry for a while then add water and salt to taste .Pressure cook for 1 whistle.
When the cooker is cool open the lid and bring the curry to boil for 5 min.
Serve Sprouted moong dal curry with rice or roti/pulka,best when served with ragi mudde .
Tips – To prepare sprouted moong at home soak whole moong dal for 3 to 4 hrs then drain the water in it,put the drained moong dal in a air tight container for over night naturally sprouts will appear or tie soaked and drained moong dal in a cotton cloth tightly for over night to get sprouts.
You can add other vegetables like turnip,carrot,beans with any sprouted seeds to prepare this curry.
