Southekai Bolu koddel I Southekai bolu huli

Southekai Bolu koddel /Bolu huli is a very simple sambar recipe prepared across the coastal region of Karnataka. This curry needs no roasting/grinding, nor masala powder. A unique and yet delicious sambar. Southekayi bol koddel or bolu huli is served as an accompaniment to rice. You can also prepare bol koddel or bolu huli with other vegetables like brinjal, lady’a finger, beans, and tindora also which gives different taste and flavor.
Ingredients:
Mangalore Cucumber (Mangalore Southekai) – 1 medium
Tur dal – 1 cup
Green chilies – 6 or 7 no’s
Curry leaves – 1 spring
Coriander – 2 Tbs chopped
Tamarind – small marble sized ball
Jaggery – 1 tsp (optional)
Salt to taste
Turmeric – 1/4 tsp
Coconut – 1 tbs grated (optional)
Coriander for garnishing
For seasoning with garlic –
Coconut oil – 2 Tsp
Mustard – 1/4 Tsp
Garlic – 5 or 6 pods crushed
Curry leaves – 1 spring
For seasoning without garlic –
Coconut oil – 2 Tsp
Mustard – 1/4 Tsp
Cumin – less than 1/4 tsp
1 pinch of Hing
Urad dal – 1/4 Tsp
Curry leaves – 1 spring

Method:
Cut Mangalore cucumber into medium-sized cubes, Add it to a vessel with slit green chilies, chopped coriander, curry leaves, tamarind, jaggery, turmeric powder, salt, and a cup of water.
Cook covered for 7 to 8 min in a medium flame until the veggies are cooked.
Add tur dal in a pressure cooker pan, add 2 cups of water, cook it for 2 whistles and keep ready
Once the dal is cooked, add it to the boiled veggies, stir well bring it to boil, (the consistency to make Bolu Huli must be thick in consistency not watery) for 5 to 6 min.
Heat a Tadka pan by adding oil to it, when it is hot add mustard seeds when it begins to sizzle add crushed mustard saute until the raw smell evaporates, then add curry leaves remove from the flame.
Add the prepared seasoning, grated coconut, garnish with chopped coriander.
Stir.
Serve Southekai Bolu Huli with hot Rice.
