Soppina saaru recipe – Greens sambar

Enjoy the simple and healthy Soppina saaru / Huli, healthy and flavorful sambar made from green leafy vegetables, a great way to include greens in your diet.This greens sambar tastes delicious with hot rice. In Karnataka, Soppina saaru with ragi mudde is a famous and delicious combination. To prepare this recipe i have taken amaranth leaves (kempu dantina soppu in Kannada) and spinach. You can also add your choice of greens to prepare this sambar. This is one of very old type of saaru prepared by my granny which is simple and also without lentils healthy and delicious 🙂
Preparation time – 10 min
Cooking time – 15 min
Serves – 4
Ingredients –
Any greens/Amaranth leaves – 1 big bunch
Spinach – 1 bunch
Green chilies – 3 no’s
How to prepare or to make Soppina saaru/greens sambar-
Wash greens properly, No need to chopp, just remove the root,
Take a vessel, add cleaned ,washed and drained greens and green chilies, add some water and keep to cook.
When it is done remove cooked chilies and set aside. Drain it in a colander to separate the water, collect the strained water and allow the mixture to cool and set aside.
To grind –
Coconut – 1/2 cup grated
Pepper – 8 corns
cooked green chilies
Garlic – 6 no’s
Cumin – 1 pinch (optional)
Coriander leaves – 1 small bunch
Tamarind – 1 small marble sized
Add all the above ingredients to mixer jar and make a fine paste
when the greens are cool make a coarse paste, just run the mixer for a second and prepare a coarse paste
For tempering –
Mustard seeds – 1/2 tsp
Cumin – 1/4
Curry leaves – 1 spring
Onion – 1 medium chopped
Oil to fry
Salt to taste
Heat a vessel by adding oil in it. when it is hot add mustard seeds allow it to sizzle then add curry leaves and chopped onions fry until it turns to golden brown in colour.
Add grounded paste and saute for a while
Then add grounded greens into it and also add collected strained water into it combine altogether to medium thick in consistency.
Add salt to taste
Bring it to boil for 5 min in a medium flame.
Aromatic, healthy and delicious Soppina saaru is ready. Enjoy the dish with plain rice or with hot ragi ball’s. This sambar tastes rich when served with rice and thick curd/yogurt.
Tips –
As i said above you can add your choice of greens to prepare this sambar.
Wash greens properly, No need to chop, select tender greens or separate the leaves and stem.
you can also chop them along with leaves avoid to grind the greens which is other method to prepare this sambar it is optinal if you wish to grind the greens follow the above method or chop greens follow the same procedure without grinding greens. Just try and enjoy:)
