Sooji vermicelli kheer recipe

Sooji vermicelli kheer / payasam is a traditional sweet recipe.  An easy to make recipe to prepare for any occasion, it is a healthy and tasty payasam  prepared with sooji, vermicelli. Coconut, dry roasted poppy seeds and cardamom is grounded into a smooth paste and added in preparation, which makes a healthy and delicious payasam to enjoy for any occasion or to offer God as  naivedyam or prasad.    

Ingredients:

Vermicelli – 3/4 cup

Semolina /Sooji (upma sooji) – 1/4 cup

Milk – 500 ml (boiled and cooled)

Sugar – 1 cup (adjust to your taste)

Cashew nut – 3 tbs

Raisins – 1 tbs

Ghee – 2 tbs

To grind –

Coconut – 1/2 cup grated/chopped

Poppy seeds – 1 1/2 tbs or 2 tbs

Cardamom – 4 no’s

 

Method:

Heat a pan, when it is hot add poppy seeds, dry roast until it turns to light brown in a medium flame.

Add roasted poppy seeds, coconut and cardamom to a mixer jar, grind it without adding water, when all the ingredients gets powdered then add water to grind, blend to a super fine paste and keep ready.

Add 2 tsp of ghee, add vermicelli, fry until it turns to light brown in colour, remove and set aside.

Add sooji into the same pan, fry until sooji turns to light brown in color. Remove and set aside.

Add remaining ghee,fry cashew until it turns to golden brown in color, add raisin, fry until it doubles in size. Remove from the flame.

Heat milk in a pan, when it begins to boil add sugar, stir until it dissolves completely, add roasted sooji by stirring, as there is no lumps fprmation, cook in a low flame for 5 min, stir

Add grounded paste and little water, combine, stir, bring it to boil, add vermicelli, stir, cook until vermicelli is cooked /done for 6 to 7 min in a medium flame. The consistency of the payasam must be medium thick in consistency as it becomes thicker when cooled . Remove from the flame. Rest it for 5 to 10 min before you serve. Add roasted nuts, stir and serve.

Traditional Healthy and delicious Sooji vermicelli kheer /payasam is ready to Offer God as a naivedyam/prasad. Offering  to the Supreme and then eating makes each and everyone happy 🙂

Note –

You can also prepare sooji vemicelli payasam by adding jaggery as well.

      Adding roasted poppy seeds and coconut gives a taste and flavor to the dish,it’s a traditional South Indian dessert.
