Snake gourd stir fry I Padavalakai Palya

Today I am posting an authentic recipe to prepare Snake gourd stir fry. This palya is a great accompaniment to sambar Rice/dal rice or rotis. Snake gourd is a nutritious vegetable It contains a variety of nutrients, vitamins, and minerals that are essential for human health. Ingredients:

Snake gourd – 1/4 kg

For seasoning –

Mustard – 1/4 tsp

Asafoetida – 1 pinch (powdered )

Dry chili – 2 no’s broken into small pieces

Curry leaves – 1 spring

Turmeric – 1 pinch

salt to taste

Oil to fry

To grind –

Coconut – 1/2 cup grated

Dry chilies – 2 no’s

Cumin – 1/4 tsp (Optional)

 

Method:

Remove the skin of the snake gourd/scrap lightly with a knife, chop it into small pieces, immerse in water and keep ready.

Heat a pan by adding oil to it, when it is hot add mustard allow it to sizzle, then add asafoetida, curry leaves and broken chilies saute for a while

Add chopped veggies to it, saute until the raw smell goes completely from it, it takes approximately 2 min, then add turmeric and salt, add 1/2 cup of water and cook covered until done.

Add grated coconut, cumin and dry chilies in a mixer jar, blend it to a coarse powder without adding water.

When the veggies are cooked (cook until the water in the veggie gets absorbed completely within it) add coarsely powdered coconut mixture, saute for 2 min, turn off the flame.

Padvalakayi palya is ready to be served. Remove the vegetable in a serving bowl and serve hot with steamed rice or sambar rice or rasam rice.

Note –

Ensure to pressure cook the snake gourd until just cooked and not too mushy.

You can add cumin for seasoning/to grind.
