Vegetable Vermicelli Upma I Shavige bhath recipe.

Shavige bath/Vermicelli Upma is a famous traditional dish of Karnataka. A simple and delicious breakfast dish prepared with mixed vegetables, onions and cashew nuts, It is rich in carbohydrates and vitamins, a healthy breakfast and a light breakfast.
Ingredients:
Vermicelli – 2 cup of 150 gm
Onion – 2 medium chopped
Mixed vegetables – 1 bowl -carrot, beans, cabbage chopped and 1 cup of green peas
Mustard seeds – 1 tsp
Cashew nuts – 20 nos
Urad dal – 1/2 Tsp
Turmeric powder – 1/2 tsp
Garam masala – 1/4 tsp optional
Green chilly – 3 to 4 chopped
Curry leaves – 15 leaves
Coriander leaves – 1 bunch chopped
Coconut – 1 cup grated (optional)
Lemon juice – 1 Tsp
Oil – 3 tbs
Salt to taste
Method:
Heat a kadai, add little oil, when oil becomes hot, add vermicelli and roast till vermicelli turns golden brown in color and keep aside. [Note – we get different types of vermicelli.I have taken roasted vermicelli, as it is roasted already no need of roasting it again]. Heat a large frying pan/kadai , add oil when oil becomes add mustard seeds followed by cashew nuts, chana dal, urad dal and fry till golden in color
Add curry leaves, chopped chilly, chopped coriander leaves and saute for 30 sec, now add chopped onions saute for a while, add chopped mixed vegetables Saute for 2 to 3 min.
Add garam masala powder and turmeric powder mix it and add 250 ml of water to it and bring it to boil, close the lid for 5 min.
add roasted vermicelli and mix properly, cook in a slim flame by closing the lid of the frying pan/kadai for 5 to 6 mins.
Toss it once again gently. Make sure that vermicelli is properly cooked if not sprinkle little more water and cook on a low flame until done.
Transfer the dish to a serving bowl garnish with grated coconut, chopped coriander leaves, and lemon juice. Serve hot
