Shankarpali recipe I sweet shankarpali

Shankarpali is a deep fried traditional sweet, which can be easily prepared at home, it is a simple and easy to make recipe with wheat flour or maida/all purpose flour. Flour is kneaded with milk, sugar powder and ghee, then rolled and cut into desired pieces, deep fried until golden brown, which turns to be crisp, crunchy sweet dish. It is an Indian snack popular in India, usually made during festive occasions especially for Diwali, and also an easy holiday snack which can be preserved for a long time in an air tight container.  

Ingredients:

Wheat flour or Maida – 1 1/2 cup

Semolina – 1/4 cup

Ghee – 1/4 cup

Sugar – 1 cup

Milk to knead

Rose essence – few drops (optional)

 

Method:

Add sugar in a mixer jar, make a fine powder and keep all the other ingredients ready.

Add flour, semolina, sugar powder toss it well, add ghee toss it once again, rub/ mix together

Ensure the ghee is mixed with the flour evenly, then add milk little by little and knead it to a dough similar to chapati dough.

Cover the lid and rest it for 15 min.

Divide the dough to equal parts , add flour for dusting and roll it to a circular shape thick roti

Remove the cracked edges with a cutter/knife.

Cut it to your desire shape/Diamond shape with a cutter/ knife. Heat oil in a pan, when it is ready, make a medium flame, gently drop prepared pieces into it.

Deep fry in a medium flame until it turns golden brown , once done remove with a sloted spoon, drain the excess oil , continue the same for the remaining dough for another 2 batches.

Put it on a kitchen paper napkin .

When cooled completely transfer it to an air tight container.

Enjoy Shankarpali as a tea time snack with a cup of tea/coffee.
