Shahi paneer recipe or how to prepare shahi paneer

Shahi panner – the word ‘Shahi’ means rich and royal, the royal taste with paneer. Prepared in a thick gravy made up of cream, tomatoes and other spices.It is a North Indian dish which goes delicious with roti/naan.This shahi panner recipe is perfect dish to enjoy with any Indian bread for lunch/dinner.

Serves – 4
Ingredients :-
Paneer cubes/cottage cheese – 200 gm
Onion- 2 no
Tomato – 2 no’s
Green chilies – 2 no’s
Ginger – 1 small piece
Garlic – 5 to 6 cloves
Pepper powder – 1/2 tsp
Garam masala – 1 tsp
Turmeric – 1 tsp
Cashew nut and raisins – 1/2 cup
Milk – 250 ml
Honey – 1 tbs
Kasuri methi – 1 tsp
Ghee -4 tbs
Fresh cream – 5 tbs
Sugar – 1 tsp
Salt to taste
Coriander leaves – 1 bunch [chopped]
Procedure :-
Heat a kadai add 1 tbs of ghee when it becomes hot fry panner cubes over medium flame until it turns to light brown and keep aside ,in the same kadai add 1 tbs of ghee and fry cashew nuts and raisins to golden brown and keep aside.
Grind onion into a fine paste,grind tomato into a fine paste separately and make a paste of ginger,garlic and green chilies into fine paste.
Heat the kadai add 2 tbs of ghee
When it becomes hot fry ginger garlic paste ,fry till it turns to brown in colour then add onion paste
Fry until it turns to golden brown in colour and ghee starts to separating then add tomato paste cook till the ghee separates from it
Add turmeric powder garam masala powder and pepper powder and saute for a while,
Add milk to the above gravy,bring it to boil.Reduce the flameand cook untill the gravy becomes thick.
Add half of the dry fruits in the gravy ,add panner cubes and 5 tbs of fresh cream into the gravy cook for 5 min.
Add honey sugar and salt to taste bring it to boil ,add kasuri methi mix altogeter and turn off the flame .
Transfer the dish into a serving dish garnish with chopped coriander leaves and fresh cream.
Serve hot with naan/roti/parata.
