Sesame rice I Ellanna recipe I Ellu sadam

Sesame rice, Ellanna or ellore in Kannada, ellu sadam in Tamil or til ke chawal is a nutty flavored healthy and tasty rice dish of Tamilnadu, a quick and easy lunchbox dish. It is also served as ‘naivedyam’ (prasad) in many temples especially on Saturdays. A flavorful rice prepared with roasted black sesame and black gram, which gives a nice aroma and just irresistible in taste.
Ingredients:
Rice – 2 cup (pressure cook it by adding 2 cup of water)
To fry –
Black sesame seeds – 2 tbs
Black gram – 2 tbs
Red chilies – 5 to 6 no’s (adjust to your taste)
For seasoning –
Mustard seeds – 1 tsp
Urad dal – 1 tsp
Peanuts – 2 or 3 tbs
Red chilies – 2 no’s (broken into 2 pieces)
Curry leaves – 3 springs
Asofoietida (hing) – 1/4 tsp (powdered)
Salt
Oil

Method:
Cook rice and keep ready.
Heat a pan dry roast sesame seeds until it splutters, Then add 1/4 tsp of oil, fry black gram and chilies to light brown,
Make a coarse powder in a mixer jar
Add prepared powder to cooked rice, add salt to taste, toss it well.
Heat oil in a kadai, when it is hot add mustard seeds, allow it to splutter, then add peanuts fry until it turns to golden brown and crisp, then add urad dal fry until light brown,
add curry leaves and chilies, fry for a while, add asofoietida (hing) remove from the flame.
Add it to rice and toss it well.
Aromatic Sesame rice is ready to enjoy.
