Sesame chikki recipe I Ellu mittai I Til chikki

Ellu Mittai or Sesame chikki a crunchy, nutty, sweet made with sesame seeds and sugar. Sesame seeds and the oil are rich with high nutritive values. Sesame seeds are roasted, mixed with caramelized sugar syrup. Sesame chikki is a part of our tradition to make them for festive seasons to bring goodness and happiness throughout the year, a quick and easy to make recipe, which makes a nutty flavored, crispy and yummy sweet dish.
Preparation time – 10 min
Cooking time – 10 min
Serves – 4
Ingredients –
White sesame -1 cup
Sugar – 3/4 cup
Cardamom powder – 1/4 tsp
Method –
To make or to prepare sesame chikki or ellu mittai –
Heat a pan dry roast sesame seeds to light brown in colour in a medium flame
Do not let them to smoke or burn. keep it aside and let it cool.
Add sugar in the same pan stir fry
Keep stirring until sugar dissolves fully
When sugar get caramelized
Add roasted sesame and cardamom powder and combine together. Remove it from the flame
Quickly add the mixture on a greased butter sheet/ greased tray
Gently press/spread the mixture, (smooth it) and give desired cut with a knife when it is warm.
Remove the pieces , transfer it to an air tight container.
Enjoy crispy and tasty Sesame chikki/ ellu mittaie.
Notes –
Take special care while frying sesame seeds do not over roast or under cook it, Fry sesame in a medium flame when it begins to splutter remove it from the flame.
No need to add water to sugar, it dissolves naturally when heated / when stir fried
When the mixture is ready, add it to a greased tray and press it with another greased plate/utensil .
Or roll the mixture when it is warm, and quickly give a cut before the mixture becomes cool.
You can cut it with a Knife or with molds of different shape.
Sesame chikki can be prepared with jaggery as well.
