Sambar or How to prepare sambar for idli

Sambar is a famous south Indian dish which is the best combination with idli, Dosa, Vada and other south Indian dishes. It is a nutritious food which is a combination of vegetables, tur dal, and spices, which is tasty and aromatic in flavor. This is a simple and easy to prepare recipe.
Ingredients:
To cook –
Tur dal – 1 cup
Any vegetable like sweet pumpkin/cucumber/mixed vegetables-carrot,beans,potato – 1 cup
Ingredients to grind –
Coconut or dry copra – 1 cup
Coriander seeds – 2 tbs
Chana dal – 1 1/2 Tsp
Urad dal – 1 Tsp
Fenugreek seed – 1/4 tsp
Clove – 2 or 3 no’s
Cinnamon – 1 small piece
Red chili – 5 to 6 nos
Turmeric powder – 1/4 Tsp
Tamarind – 1 small piece
Jaggery to taste
Oil to fry
For seasoning –
Mustard seed – 1/2 tsp
Curry leaves – 2 spring
Hing/asafoetida – 1/4 Tsp
Onion – 1 medium chopped
Tomato – 1 medium chopped
Method:
Pressure cook tur dal by adding 2 cups of water for 2 or 3 whistles, cook vegetables separately.
Add 1 or 2 tsp of oil in a pan, fry all the above ingredients one by one separately to golden brown in color (take care, not to overcook or burn any ingredients) as it gets a bitter taste to the sambar, allow it to cool, then transfer it to a mixer jar, with coconut, blend to a fine paste by adding enough water to grind and set aside.
Add little oil in a thick bottomed vessel, when it is hot, add 2 tsp of oil when it is hot add mustard seeds when it begins to sparkle add curry leaves and Hing/asafoetida, add chopped onion fry until translucent, then add tomatoes fry until it becomes soft, add grounded paste, saute for a while in a low flame for few secs
Add cooked dal and vegetables, combine together to a medium thick in consistency. Add salt to taste.
Bring it to boil for 5 to 8 minutes and turn off the flame.
