Sabudana khichdi is a very popular maharashtrian fasting food. An Indian dish made from soaked Sabudana. This dish specially made during fasts, in which sago is cooked with potatoes and crushed peanuts which makes a yummy snack. It can be served as a breakfast or as an evening snack.

Preparation time – 15 min

Soaking time – 2 hrs

Cooking time – within 10 min

Serves – 4

Ingredients –

Sabudana (Tapioca pearls) – 1 1/2 cup

Boiled potato – 1 big sized (boiled and cooked)

Cumin – 1 tsp

Green chilies – 2 to 3 no’s chopped

Curry leaves – 3 springs

Coconut – 1/2 cup grated

Coriander – 1/2 cup chopped

Roasted Peanuts – 1/2 cup

Lemon – 1 tsp (adjust to your taste)

Salt to taste

Sugar – 1 tsp (optional)

Ghee – 2 tbs

Method – 

To make or to prepare sabudana khichdi –

Rinse sabudana under running water, wash it twice, soak it for 1 1/2 hour, drain the water in it with the help of a strainer.Rest it for 30 min and set aside.

Heat a pan dry roast peanuts to golden brown and crisp in a medium flame. When it is cool remove the husk of the roasted peanuts and crush it to a coarse powder and keep ready.

Pressure cook potato for 4 to 5 whistles and when it is done remove the skin of it and cut boiled potato into small pieces and keep ready to start.

Heat ghee in a kadai, when it is hot add cumin seeds into it, allow it to splutter

Add chopped green chilies and curry leaves into it.

Add potato into it and saute gently sprinkle little salt over it. Add a pinch of turmeric powder (optional)

Add drained sabudana into it and toss it well .

Add salt to taste and mix properly.

Add crushed peanut powder into it and make a low flame and close the lid of the kadai, cook it for 5 min .

Add freshly grated coconut and combine.

Finally add sugar, mix switch off the flame, add lemon juice and chopped coriander and toss it well. Rest it for 5 min before you serve.

Serve hot and enjoy as a yummy breakfast or as an evening snacks with a cup of coffee/tea.

Notes –

Soaking time of sabudana depends as per the quality of tapioca pearls you have.

Adding sugar, salt, roasted and crushed peanut powder and lemon juice to adjust to your taste.
