Sabbakki payasa or Sabudana kheer recipe is one of the easiest Indian dessert recipes and can be prepared in a short time. This is a popular Indian pudding that is made with tapioca pearls for religious fasting days. It is one of a healthy and delicious dessert made with tapioca pearls, sugar, milk, cardamom powder and nuts

Ingredients:

Sabbaki/sabu dana /Tapioca pearls – 1 cup

Sugar – 3/4 cup (adjust to your taste)

Milk – 500 ml (boiled and cooled)

Cashew nut – 3 tbs

Raisin – 1 tbs

Cardamom powder – 1/4 tsp

Method:

Rinse sabudana in water, drain the water in it, add 1/1/2 cup of fresh water to soak it. Soak it for 30 min until soft.

Keep all the ingredients handy to start.

Add soaked sabudana (along with water in it) in a pan / heavy bottomed container on a stove top and begin to cook, cook in a medium flame, for 5 to 6 min, stir.

Add warm milk into it, bring it to boil. Add sugar stir, boil until sugar dissolves completely. Boil for 5 to 6 min in a medium flame, check the pearls are soft and cooked, if not, cook until done, keep stirring occasionally. Once it is done, switch off the flame.

Add cardamom powder, stir, mix properly.

Heat 2 tsp of ghee in a pan, when it is hot add nuts, fry until it turns to golden brown in colour, remove from the flame, allow it to cool.

Add roasted nuts to Kheer.

Enjoy Healthy and delicious Sabbakki payasa /Sabudana Kheer . Serve it warm or chill it in refrigerator and serve.

Note –

The consistency of the sabudana kheer must be medium, as it becomes thick when cooled.

You can add few drops of vanilla essence or your choice of flavors to prepare the recipe other than cardamom powder.

Always prefer to add full cream milk to prepare this recipe or you can add condensed milk to get rich and creamy sabudana kheer.
