Rava vada recipe I ರವೆ ವಡೆ

Rava Vada is a very popular South Indian snack, which has a unique taste and fabulous texture crispy outside and soft from inside. A quick to make a snack for any time, all you need are basic ingredients like semolina, onion, curry leaves, cumin, grated ginger… which makes a crunchy and yummy snack to munch with a cup of tea/coffee, best when served with coconut chutney.
Ingredients:
Semolina/Rava – 2 cups
Rice flour – 1/2 cup
Onion – 3 medium chopped finely
Ginger – 1 tsp grated
Coriander – 1 small bunch chopped
Curry leaves – 2 springs chopped
Green chilies – 2 no’s chopped
Chilly powder – 1 to 1 1/2 tsp
Cumin 1/2 tsp
Cooking soda – 1/4 tsp
Salt to taste
Hot oil – 2 tbs
Oil to deep fry

Method:
Add semolina, rice flour, grated ginger, chopped green chilies, onion, coriander, curry leaves, cumin, salt and cooking soda in a bowl toss it well.
Rest the mixture for 15 mins.
after 15 mins the mixture becomes soft due to the moisture of chopped onion, Heat oil in a pan to deep fry, when it is hot enough add 2 tbsp of hot oil to the mixture, toss it with a spoon, sprinkle little water, and mix it to a chapati dough consistency, adjust the consistency that is easily spreadable.
grease your hands with little oil,
Take a lemon sized ball pat it to round and thick patties, drop it to the hot oil, deep fry until it turns to golden and crispy for both sides, cook on a medium flame.
Once done remove it with a slotted spoon,
transfer it on a kitchen tissue to drain the excess oil in it, and continue the same for the rest in one or two batches.
Crispy and yummy Rava vada is ready to serve.
