Rava Pongal

Pongal is the simplest and easiest breakfast recipe. It is an auspicious dish prepared on harvest festival Makara Sankranthi in almost south Indian houses, A simple yet healthy Rava Pongal is made from roasted semolina and moong dal. Rava Pongal is a healthy and comforting Breakfast recipe similar to Ven Pongal, the only difference is Rava is used instead of rice which can be prepared in a short time with simple ingredients.
Ingredients:
Semolina/Rava – 1 cup
Moong Dal – 1/2 cup
For seasoning –
Mustard – 1/2 Tsp
Cumin – 1 tsp
Pepper – 1 tbs
Cashewnut – 2 tbs
Ginger – 1 tsp grated
Green chilies – 1 or 2 chopped
Curry leaves – 2 spring
Coriander – a small bunch chopped
Asafoetida – 1/4 tsp
Coconut – 1/2 cup grated
Oil/ghee
Salt to taste

Method:
Dry roast moong dal until it gets hot, add 1 cup of water and pressure cook it for 2 whistles.
Add 1 or 2 tsp of oil/ghee in a pan fry Rava (semolina) until light brown on a medium flame.
Keep all the ingredients handy for seasoning. Heat oil/ghee in a pan, when it is hot add mustard and peppercorns, allow it to splutter, once it starts to splutter add cumin, cashew nuts, fry until it turns to light brown (take care not to burn/overcook as it spoils the taste of the dish) in a medium flame, now add ginger, green chillies, curry leaves, coriander saute for a while.
Add 2 1/2 cup of water, salt to taste, Bring it to boil, add roasted semolina (Rava) into it, stir continuously.
Now add cooked Moong Dal
Mix well, close the lid of the pan cook on a low flame for 5 mins.
Add grated coconut and fresh coriander, mix once again, cook it for 1 min and switch off the flame.
Enjoy hot Rava Pongal with a dollop of ghee and Coconut chutney.
Add pinch of tumeric to get color
