Quinoa Kesari

Quinoa Kesari is a delicious and healthy sweet that is also an easy and quick to make recipe has a preparation similar to Rava Kesari/ Sheera. Kesari Bhat is a popular and easy sweet dish from Karnataka. It is one of the easiest of all sweet preparations. Traditionally Rava / semolina is used to make this dish, but instead of using Rava I’ve tried making Kesari with quinoa which turned out to be good enough.
Ingredients:
Quinoa – 1/2 cup
Water – 2 cup
Organic Sugar – 1/2 cup adjust to your taste
Orange food color – a pinch
Ghee – 3 tbs
Cashew nut – 10 no’s
Raisin – 1 Tsp
Cardamom – 2 no’s powdered
Method:
Rinse and soak quinoa in water for 10 minutes. After 10 minutes drain the water and keep aside. Heat a pan add 1 tsp ghee, now add cashews and fry it until golden brown.
When done remove it from the pan and add the soaked quinoa and roast for few seconds. Now add 2 cup of water and mix well. Allow it to boil well with a lid on in medium flame.
This should take about 8 to 10 minutes.
When the quinoa looks cooked and dry add orange food color. Mix well.
Ensure the water gets absorbed, Now add sugar and cardamom powder. Mix well and add ghee and fried cashews.
Cook in simmer until the mixture turns thick for few mins, switch off the flame.
Serve warm.
