Purple Cabbage Stir fry

This is a simple south Indian stir-fry (palya), Simple yet delicious side dish to go with rice or rotis. Red/Purple cabbage is a nutritious and delicious vegetable, which has a great store of vitamins and minerals helps to reduce the risk of heart disease, diabetes and certain types of cancer. It is rich in anti-oxidants which makes skin supple and clear.
Ingredients:
Purple cabbage – 1 medium (500gm)
Mustard – 1/4 Tsp
Cumin – 1/4 tsp
Chana Dal – 1/2 Tsp
Urad Dal – 1/4 Tsp
Curry leaves – 1 spring
Dry chilies – 2 no’s cut into small pieces
Asafoetida – 2 pinches powdered
Coconut – 1/2 cup grated
Coriander – a small bunch chopped
Salt to taste
Oil to fry
Method:
Chop purple cabbage into thin and lengthy, immerse in water, drain the water and keep ready.
Heat a heavy bottomed pan with oil in it, when it is hot add mustard allow it to splutter then add cumin, chana dal, urad dal, fry until light brown
add chilies, asafoetida, and curry leaves fry for a while. (Take care not to burn any ingredients as it spoils the taste of the dish.)
Add cleaned purple cabbage into it, saute well add salt to taste, cook covered on a low flame no need to add water,
It takes 10 mins to be done while cooking on a low flame, cabbage releases water naturally, once it is cooked/ done, boil the curry until the water gets evaporated completely, now add grated coconut and chopped coriander. Stir for 2 mins switches off the flame.
