Pundi I Instant pundi I Rice rava dumplings

Instant pundi is an easy method of making Pundi with rice rava, Pundi or Pundi Gatti, is usually, a round shaped soft rice dumpling, a regular breakfast belonging to Mangalorean cuisine, prepared by soaking rice, grinding, tempering, cooking and finally steaming, as it requires a lot of effort instant pundi can be made easily with Rice rava (semolina), grated coconut, and other simple ingredients. A tasty and a healthy breakfast dish served with chutney and sambar.

Ingredients:

Rice Rava (semolina) – 2 cup

Coconut – 1 cup freshly shredded

Mustard – 1 Tsp

Chana dal – 1 tsp (optional)

Urad dal – 2 Tsp

Curry leaves – few chopped

Red chilly – 2 no’s broken into small pieces

Coriander – a small bunch

Salt to taste

Coconut oil – 1 tbs

 

 

Method:

Heat a pan with oil in it, when it is hot sizzle mustard, then add chana dal and urad dal fry until it turns to lightly brown, add chopped chilies, curry leaves and coriander

add 3 cup of water to cook 2 cups of rice rava, add salt to taste bring it to boil, once it begins to boil add grated coconut, add rice rava keep stirring continuously as there are no lumps in it.

cook in a low flame for 3 to 4 min, remove from the flame, allow it to cool.

When the mixture is warm enough take a small portion of the prepared mixture, press it/shape it into a round shaped ball.

Steam it for 15 min.

Serve with coconut chutney/ sambar
