Puffed rice pakoda recipe

Puffed rice pakoda is a simple innovative, quick & easy to make, lip smacking dish …. an all season wonder that can be made with puffed rice, rice flour, gram flour, chopped dill leaves, coriander, onions and spices which makes a crispy and appetizing to munch with a cup tea or coffee.  

Preparation time – 20 min

Cooking time – 5-10 min

Serves – 4

Ingredients –

Puffed rice – 200 gm

Onion – 2-3 no’s chopped finely

Dill leaves – 1 cup chopped

Coriander – 1 cup chopped

Curry leaves –  1 spring chopped

Rice flour – 1/2 cup

Gram flour – 1/2 cup

Cashew nuts – 2 -3 tbs broken into small pieces

Chilly powder – 1 tsp (adjust to your taste)

Cumin or carom seeds – 1/2 tsp

Ghee – 1 tbs

Salt to taste

Oil to deep fry

Method –

To make or to prepare puffed rice pakoda’s –

Keep all the ingredients ready as shown in the above image,

Rinse puffed rice in water, drain the water in it, add it to a bowl

Add finely chopped onions, dill leaves, coriander leaves (rinsed and drained)  cashew nuts, toss it well

Add rice flour, gram flour, chilly powder, cumin and salt, toss it again without adding water to it.

Finally add ghee and mix together with the mixture. Sprinkle little water to knead the mixture.

Heat oil to deep fry, when the oil is hot

Take a small ball of mixture and drop it one by one into the oil

Fry until it turns golden brown and crisp.

Stain them on a blotting paper to absorb the excess oil.

Serve hot and Enjoy crispy and yummy puffed rice pakoda’s with tomato sauce or pudhina chutney.

Notes –

As puffed rice is rinsed and drained, it needs very water to knead the mixture.

You can add garam masala powder to adjust your taste which is optional

Take care not to over roast or under cook pokoda’s.

adding Dill leaves is optinal, or else you can prepare with chopped coriander and mint leaves as well.

    Can you bake these instead of deep fat fry?

      No you can not bake it, but it can be prepared with air fryer, without oil. Thanks for your comment.
