Potato stir fry
Potato stir fry is a tasty curry to enjoy as a side dish for Poori or chapati’s. Potato cubes are cooked and seasoned with flavorful spices which makes a aromatic and tasty side dish, ginger, garlic and fennel seeds are crushed to a coarse paste and added while seasoning, which makes the dish aromatic and delicious curry, a simple yet delicious sabji.
Ingredients:
Potato – 4 medium sized, peeled and cut into cubes
Green chili – 1 or 2 no’s slit
Onion – 2 no’s chopped
Tomato – 2 no’s chopped
Turmeric – 1/4 tsp
Chili powder – 1/2 tsp adjust to your taste
Salt
Coriander – 1 small bunch chopped
Oil for seasoning
To crush –
Garlic – 4 to 5 pods peeled
Garlic – 1/4 inch
Fennel seeds (soumph) – 1/4 tsp
Method:
Peel potatoes, cut it into medium size cubes, rinse it in water, drain, put it in a pressure cooker, add 2 cup of water and cook it for 2 to 3 whistles, once done drain the water in it and keep ready.
Add ginger, garlic and fennel seeds in a mixer jar and make a coarse paste and keep ready,
Heat oil in a pan, add green chilies saute in oil, add onion fry until translucent, then add tomato fry until it becomes soft, once it is done add crushed spices, fry unil aromatic, add chili powder, turmeric and salt, saute
Add cooked and drained potato cubes, toss it gently, remove from the flame.
Add chopped coriander mix with the curry.
Enjoy as a side dish for roti, poori or rice.
