Potato curry I Alugedde palya with sambar powder recipe

Potato curry is a simple and delicious curry served as a side dish for rice or roti. It is one of a traditional south Indian curry prepared by adding home made sambar powder which tastes yummy as a side dish. This is quick and easy to make recipe with simple ingredients.

Preparation  time – 10 min

Cooking time – 10 min

Serves – 4

Ingredients –

Potato – 2 medium cut it into cubes

Onion – 2 medium chopped

Mustard – 1/2 tsp

Curry leaves – 2 springs

Sambar powder – 3 tsp

Turmeric powder – 1/4 tsp

Coconut – 3 tbs grated

Coriander – 1 small bunch chopped

Salt to taste

Oil to fry

Method –

To make or to prepare Potato curry –

Peel potato cut it into cubes, immerse in water immediately, keep all the above ingredients ready to start.

Heat a pan by adding oil in it, when it is hot add mustard seeds allow it to splutter, then add curry leaves and chopped onion

Fry until onion turns translucent

Add cubed potatoes into it and saute for a while.

Add sambar powder, turmeric powder and salt to taste, stir fry for a while till you get a fresh aroma.

Add 1/2 cup of water and close the lid of the pan, cook in a medium flame, stir occasionally before it is done.

Bring the curry to thick in consistency. Ensure that potato is cooked/done if not sprinkle little more water and cook until it is done and water in the curry should absorb fully

Add grated coconut and combine with the curry.

Switch off the flame.

Finally add chopped coriander and mix altogether.

Transfer the dish to a serving dish and enjoy as a side dish for sambar rice or for roti’s.

Notes –

Instead of preparing this recipe in pressure cooker better to cook in a pan to get perfect taste.

It takes very less time to prepare this curry.

Take care while seasoning, don’t burn any ingredients as it spoils the taste of the dish. Always cook in a medium/low flame.

Add water as i mentioned above, do not add too much of water as potatoes becomes mash/over cooked.

You can add the quantity of sambar powder more or less to adjust your taste.
