Pineapple Holige

Holige/Obbattu / Puran Poli is a popular, traditional festival sweet that is prepared during the Ugadi festival. Pineapple Holige is an Innovative Holige/Puran Poli, in which stuffing is fresh Pineapple, Coconut, sugar/jaggery, a healthy and a tasty dessert for any occasion. There are numerous versions of Holige with a variety of stuffings, Pineapple Holige is one among them.
Ingredients:
For Outer layer –
All Purpose flour – 1 cup
Chiroti Rava (fine semolina) – 1 cup
Turmeric – 1/4 tsp optional
Salt – 1 pinch
Oil – 1/4 cup
For Stuffing –
Pineapple – 1 medium peeled and chopped
Organic sugar or Jaggery – 3/4 cup
Desiccated coconut – 1 1/2 cup to 2 cup

Method:
To prepare the Outer Layer –
Add all-purpose flour (maida), Chiroti Rava and turmeric in a bowl, toss it, add little by little of water, Knead it into a dough which is soft than a chapati dough, once done add oil again knead it to a soft dough for few mins ( you have to knead it really well) and rest it covered for 3 hrs to get proper Holige.
To make Stuffing for Pineapple Holige –
Blend pineapple pieces to a paste without adding water and keep ready.
Add organic sugar/jaggery in a heavy bottomed vessel add 2 tbs of water, bring it to boil until it dissolves completely.
stir, boil for 2 to 3 mins.
Add pineapple paste, stir properly for few minutes, boil it until the water gets evaporated,
Ensure the pineapple mixture thickens, then add dedicated coconut, stir
switch off the flame. Allow the mixture to cool completely.
Make the equal lemon sized ball of prepared stuffing.
Once again knead the dough for few secs. Heat a flat pan on a low flame. Take a parchment paper/Banana leaf to grease it with oil. Take a lemon size ball of the prepared dough, flatten it into a small round,
then place a stuffing in the center of it, cover it/stuff it, gently tap and spread it into a round shape thin Holige/Puran Poli. Slide the flattened Holige on your palm carefully, it comes out easily.
Put it in the hot pan, cook on a medium flame until light brown, apply oil if necessary. Then flip to the other side continue to cook for few secs until few brown spots appear. Remove it from the pan and continue the same for the rest of pineapple Stuffing and dough.
Pineapple Holige is ready to serve.
