Phirni recipe

Phirni is a easy traditional Indian rice pudding like dessert. It is a classic Indian sweet pudding which is made all over India, In south India Phirni is prepared with Jeera samba rice, in north it is prepared with basmati rice which as a natural aroma and very delicious in taste, It is an easy to prepare Indian sweet with simple ingredients which can be serves hot or best when served chilled.
Ingredients:
Jeera samba rice -1 cup
Sugar – 1 cup (adjust to your taste)
Milk – 1 ltr
Cashew nut – 10 no’s
Almond – 2 tbs chopped
Cardamom – 4 no’s powdered
Saffron strands – 1 or 2 pinch
Ghee – 2 tsp

Method:
Add jeera samba rice in a mixer jar,
Make a dry (coarsely) powdered, similar to semolina,
Heat a pan, add milk in it when it begins to boil add prepared rice mixture into it slowly, keep stirring continuously as there is no lumps in it,
Cook in a medium flame until it is cooked/ done, stir in between before it is done, Add sugar and cook until it dissolves in it. (Cook it for 15 to 20 min)
Ensure that the rice is done, then add saffron strands, stir. Remove from the flame
Heat ghee in a tadka pan, when it is hot add cashew nut and chopped almonds fry until it turns to golden brown,
Add cardamom powder, roasted nuts, mix altogether properly. Allow it to cool.
Enjoy traditional Phirni, serve chilled refrigerate it for 2 to 3 hrs or transfer the dish to a earthen pot and enjoy chilled phirni.
Note –
You can also prepare Phirni with basmati rice following the same procedure.
You can add dry fruits of your choice.
Adding saffron strands, phirini turns to light yellow color after preparing.
