Peanut chutney

Chutney is an important part of Indian cuisine. There are so many variety of chutney which can be consumed as a dip of sauce with any kind of Indian food. Chutney are prepared either wet or dry and can be sweet, sour or hot. It is the combination of nuts. 

Chutney is a great combination of chutney to idli, vada, dosa, upma and even paddu. 

Preparation  time -5 to 10 min

Cooking time – 2 min for just seasoning

Serves – 4 to 5 .

Ingredients : for preparation of chutney.

Grated coconut – 1 cup

Peanuts – 1/4 cups

Green chili – 2 nos

Ginger – 1 small piece

Salt to taste

Ingredients : for seasoning

Mustard seeds – 1/2 tsp

Urad dal – 1/2 tsp

Asafoetida (hing) – 1 pinch

Curry leaves  – about 10 leaves

Step-1-Preparation of chutney

1,Roast the peanuts till it is crispy in a pan. Keep aside.

2.After peanuts are cooled, remove the skin of it.

3.Take a mixer jar add all the above chutney ingredients

(not to be grounded finely) and blend it in to a medium paste.

4.Transfer the prepared chutney into a serving bowl.

Step-2-Seasoning of chutney

1.Add  spoon of oil to a Kadai.

2.Add mustard seed, when it starts to sparkle, add urad dal, fry till it turns to golden brown. Add curry leaves allow it to sparkle and add this seasoning to prepared chutney.
