Patra (Patarveliya) is most popular snack in Gujarat and Maharashtra. Patra is a low calorie delicacy, it is steam cooked rolls, made from arbi or colocassia leaf. This patra, Arbi leaves rolled with a gram flour and spice powders which is simply mouth-watering. With its spicy, tangy and slightly sweeter in taste, a seasonal snack dish prepared almost in monsoon.  

Ingredients:

Colocassia /arbi leaves – 20 leaves

Gram flour (Besan) – 1 1/2 cup

Coriander – 2 tsp

Chilly powder or green chilly paste – 2 tsp (adjust to your taste)

Cumin powder – 1/4 tsp

Ginger – 1 tbs grated

Turmeric – 1/4 tsp

Jaggery – 2 tbs powdered

Tamarind juice – 1 tbs (adjust to your taste)

Salt to taste

For seasoning –

Oil – 2 tbs

Mustard seeds – 1 tsp

Asofoetida – 1/4 tsp powdered

Sesame seeds – 1 tbs

Coconut/copra – 3 tbs grated

Coriander – 1 small bunch chopped

 

 

 

 

Method:

In a bowl take gram flour (besan), ginger, chili powder, salt, red chili powder, jaggery, tamarind juice.

Mix well . Add little by little water and mix it to a thick paste similar to idli batter consistency.

keep the batter ready to apply on the arbi leaves.

Trim/remove the (center) stem and wash the colocasia leaves. Pat dry the leaves on the kitchen towel/ kitchen paper.

Apply this paste all over the back side of an arbi leaf. Place another leaf over this with its pointed end opposite the first one. Apply the paste over it,

Always start from the big leaf then place the smaller leaves on it, go on applying the batter for 8 – 10 leaves. Fold the sides slightly and tightly roll. Keep the rolls on a perforated plate.

 Heat sufficient water in a steamer. Cover with the lid and steam it for 15 min or till done.

Take the rolls out and let them cool completely

Ensure the rolls are completely cooled at room temprature, slice it to thin slices.

Keep all the ingredients handy for seasoning.

Heat oil in a pan, when it is hot add mustard, allow it to splutter in oil, add sesame seeds allow it to splutter, add asafoetida , add sliced patra into

Toss it well, switch off the flame. Add chopped coriander and grated coconut on it.

Transfer onto a serving plate, garnish with coconut and coriander leaves and Enjoy.
