Paneer pav bhaji

Paneer Pav Bhaji is the delicious blend of paneer and other vegetables cooked in Indian spices and then served with lots of butter on pav, lemon wedges and finely chopped onion. This Pav Bhaji really has tremendous taste because of cottage cheese. Paneer Pav Bhaji is one of the most famous street food of Mumbai. Today I’m sharing the quick and easy way to make homemade paneer pav bhaji.
Ingredients:
Pav bun – 2 or 3 packs
Cottage cheese (Paneer) – 200 gms chopped into small pieces
Potato – 2 medium
Carrot – 2 no’s
Beans – 1/2 cup chopped
Green peas – 1/2 cup
Onion – 2 no’s
Tomato – 2 no’s
Capsicum – 1/2 cup chopped
Ginger garlic paste – 2 Tsp
Green chilli – 2 no’s 2hopped
Turmeric – 1/4 tsp
Chilli powder – 1 Tsp
Pav bhaji masala – 4 Tsp
Salt to taste
Butter – 100 gms
Coriander – 1/2 cup chopped finely
Method:
Peel carrot, potato, chop all the vegetables, Add 1 cup of water to cook the veggies and cover the lid, cook it for 1 whistle and keep ready.
Keep all the other ingredients handy to start. Heat a pan with 2 tbs of butter, when it is hot add chopped onion and green chillies, saute until it turns translucent.
Add ginger garlic paste, saute until you get a fresh aroma.
Then add finely chopped tomatoes, saute until it turns mushy,
Add capsicum saute well,
Add chilly powder, turmeric and pav bhaji masala, saute for few secs, add little water about 1/4 cup, bring it to boil, add salt to taste,
Add cooked veggies, add 100 gm paneer (remaining 100 gms of paneer is to add finally) cooked covered for 3 to 4 mins on a medium flame.
Mash all the ingredients together with a potato masher, mash until all the veggies are 3/4 mashed.
Add 1/2 cup of water, bring it to boil for 4 to 5 mins, add water to adjust the consistency.
Finally, add remaining 100gms of paneer, saute/boil for few secs,
Add fresh coriander and 2 to 3 tbs of butter, mix with the bhaji, turn off the flame.
Heat a pan, brush 1 tsp of butter to it cut the pav buns into two halves, place it on the pan, roast it until it turns light brown for both sides.
Serve hot with prepared bhaji with some more butter…
Enjoy with finely chopped onion, fresh coriander and squeezed lemon juice over it.
