Palak Bajji I Palak Pakora

Bajji’s are popular and delicious evening snack across south India, it is a great street food. Palak bajji’s are made with whole spinach leaves, coated with spiced gram flour batter and deep fried till crisp, It is a mouth-watering tasty evening snack and a quick and easy appetizer to munch with a cup of tea or a cup of coffee.
Ingredients:
Gram flour – 1 cup
Rice flour – 2 Tsp optional
Cumin or carom seeds – 1/2 Tsp
Chilly powder – 1 tsp (adjust to your taste)
Salt to taste
Cooking soda – 2 pinch
Spinach leaves – 1 bunch / 20 big leaves
Oil to Deep Fry
Method:
Add gram flour and rice flour in a bowl, add chilly powder, cumin, salt and cooking soda toss it well together. Add little by little water, make a smooth batter similar to dosa batter consistency, mix well as there should not be a single lump in it and set aside.
Rinse spinach leaves drain the water completely and keep ready, heat oil in a pan to deep fry.
when the oil is ready to deep frying, When the oil is hot, drop a drop of prepared batter in it, if it comes up, then oil is ready to deep fry bhaji’s. Take two spinach leaves dip it carefully in the prepared batter for both sides, drop it into hot oil,
Take care not to overcrowd them, prepare them in batches. Fry until it turns to golden brown and crisp for both sides. once it is done, Remove it with a slotted spoon, drain excess oil in it, immediately place it on an absorbent kitchen tissue to absorb excess oil in it. Serve Hot
