Paddu recipe

Paddu is a delicious breakfast dish . If you are tired of having just dosa’s, this is a great dish to bring flavor and texture. They are bite sized and make a great snack box for children as well. It is best savored hot hot right out of the pan with some spicy chutney, You can add grated veggies, and make your own version of these paddu’s. Paddu is a South Indian common breakfast dish.
Preparation time – 30 min
Cooking time – 8 min for each batch
Serves – 5
Ingredients –
To prepare batter –
Rice – 1 cup
Toor dal – 1/3 cup
Moong dal – 1/3 cup
chana dal – 1/3 cup
Fenugreek seeds – 1/2 tsp
Urad dal – 1/2 cup
Poha/ avalakki (thick) – 1/4 cup
Procedure to make or to prepare batter –
Wash and soak rice , dals , methi seeds, poha in water for about 4-5hrs. Grind urad dal to a super fine paste by adding water, then grind all ingredients to fine paste and combine the batter to get dosa batter consistency. Mix properly, Ferment overnight.
Next morning add salt to taste, mix properly and set aside.
Ingredients for tempering –
Onion – 2 big finely chopped
Green chilly/paste – 2 no’s
Coriander leaves – 1 bunch chopped
Coconut – 4 tbs grated
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Oil to fry
Paddu tava
Procedure to make or to prepare paddu –
Heat a pan by adding oil in it. When it is hot add mustard seeds allow it to sizzle, add cumin seeds allow it to splutter. Add chopped green chilies/ paste and finely chopped onions and fry till it turns to translucent . Add chopped coriander saute for a while.Remove from the flame and allow it to cool.
When the mixture becomes cool add it to prepared batter, add grated coconut and mix altogether properly and keep ready.
Heat paddu tawa by greasing it with oil/ghee/butter, add little oil in each of the compartments.
Mix the batter well and start pouring the batter into it. Apply oil/ ghee/butter, all around it, Cook in a medium flame. close the lid, cook on both sides till they are golden brown.
Once it is done remove them and continue the same procedure for remaining batter.
Once done serve hot with coconut chutney/chutney pudi. Enjoy crispy and yummy Paddu’s when it is hot.
Note –
To enhance the taste of the dish you can add chopped dill leaves while tempering or you can use grated vegetables as well.
Paddu’s taste rich when it is prepared with butter/ghee and served hot with chutney 🙂
