Otthu shavige or  Akki shavige is a traditional regional Karnataka recipe, a home made rice noodles served with coconut milk, a delightful sweet dish. Preparation of this dish varies from region to region, it is prepared with rice flour, a dough is prepared by cooking rice flour in boiling water, you need to use the ottu shavige machine / chakli press or machine to make this food. Rice noodles is prepared by pressing cooked rice dough in a chakli machine and coconut milk is prepared by blending coconut, poppy seeds (roasted) jaggery and cardamom, a powder is prepared to sprinkle on it, prepared with roasted gram, roasted sesame seeds, which gives a heavenly  taste, its just a feast for your toungue. It is a healthy sweet dish, as it is cooked, and also easily digestible. An oil/ghee less healthy sweet dish.

Ingredients:

To prepare rice dough –

Rice flour – 500 gm

Salt – 1/4 tsp

Water – 2 cup (750 ml)

To prepare coconut milk –

Coconut – 1 cup grated/chopped

Jaggery – 3/4 cup scraped/grated/powdered

Cardamom – 4 no’s

Poppy seeds –  1 1/2 tsp

To make powder –

Roasted gram – 3 tbs

poppy seeds (dry roasted) – 1 tsp

sesame seeds (dry roasted) – 1 1/2 tsp

 

 

Method:

To make coconut milk –

Dry roast poppy seeds until light brown, add coconut, cardamom, roasted poppy seeds in a mixer jar, make a dry powder with out adding water, when all the ingredients id powdered, add water to grind, blend it to a super fine paste, finally add jaggery (powdered or grated), blend it until jaggery dissolves completely.

Transfer it to a bowl, add water and stir to a medium thick in consistency.

To prepare powder –

Dry roast poppy seeds and sesame seeds until light brown, Add roasted gram, dry roasted ingredients in a dry mixer jar, make a powder and keep ready.

To prepare Dough –

Boil water in a vessel, add salt, when it stars to boil, add rice flour into it, mix it with a spatula /wooden stick as there is no lumps in it.

Cook in a medium flame, cook until the dough should not stick to the hands, when it is touched. Cook it for 10 – 15 min in a medium low flame.

Combine as the is no lumps in it, cook once again for 5 min.

Put the dough on a wooden board/ cleaned surface, knead it to a soft dough, wet your hands, knead it properly for 5 min when the dough is warm enough.

Take a chakli machine with medium spores mould, wet the inner part of the chakli machine with water, fill the warm dough in it,

Close the lid of the chakli machine, press it and collect the noodles in a plate.

Rotate the chakli machine gently in circular motion while making rice noodles. Cut at the desired size with your fingers and start to make the next, fill the dough again to make, complete it in 3 or 4 batches, put the prepared noodles as it doesn’t touch each other in a wide plate.

Once if a chakli machine is filled with the dough, makes 3 medium size rice noodles,

Otthu shavige, Home made rice noodles is ready to serve.

Serving Idea – Serve a rice noodle in a plate, add a ladle of coconut milk on it, sprinkle 2 tsp of prepared powder on it and Enjoy !!!

Note –

The consistency of the dough must be soft (easy to press/rotate in a chakli machine) cooked and kneaded properly.

Make/ press rice noodles when the dough is warm so that it will be easy to press.

You can also serve coconut milk and powder with Ragi otthu shavige as well.

Adding powder made with roasted gram, roasted poppy seeds and sesame to enhance the taste of the dish,

To prepare the powder you can also use black  sesame.
