Healthy oats upma recipe,

Oats are known for their health benefits because of its dietary fibers, iron and cholesterol reducing agents. Oats upma is a fusion of western and Indian ingredients, which combines all health benefits of oats, fresh vegetables and Indian spices. This south Indian recipe of upma prepares a healthy dish that is suitable to be served to kids as well as diabetic patients.Oats upma is a healthy and delicious dish prepared with oats and mixed vegetables.

Serves – 4
Ingredients –
Oats – 2 cup/1 bowl
Onion – 1 cup finely chopped
Carrot – 1/2 cup chopped
Beans – 1/2 cup chopped
Green peas – 1/2 cup (frozen/fresh)
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Green chilies – 2 chopped
Curry leaves – 2 springs
Chana dal – 1 tsp
Cashew nuts – 2 tbs broken into pieces
Ginger – 1 inch grated/1 tsp grated ginger
Coriander leaves – 1 cup chopped for garnishing
Coconut – 4 tbs grated
Turmeric powder – 1/2 tsp
Lemon juice – 1 tsp.
Salt to taste
Oil to fry
HOW TO MAKE OR PREPARE OATS UPMA RECIPE
Heat 1 tsp of oil in a kadai,dry fry oats for 5 to 6 min in a medium flame and set aside.
In the same kadai add oil,when it is hot add mustard seeds,when it starts to crackle add cumin seeds,chana dal,cashew nut and fry till it turns to golden in colour.Then add curry leaves,chopped green chilies and grated ginger and stir fry
Add chopped onion fry for a while,add chopped vegetables and green peas stir fry and close the lid of the kadai for 5 min.Cook in a low flame.
Add water to dry roasted oats and drain out the water and keep it ready.
When vegetables are cooked /done, add salt to taste and turmeric powder mix altogether.
Add drained oats mix altogether in a low flame close the lid of the kadai .
Turn off the flame when it is done,add chopped coriander leaves,grated coconut and lemon juice.
Serve hot,and enjoy OATS UPMA as a Healthy breakfast or as a healthy and delicious evening snack with a cup of tea/coffee.
Note – You can add vegetables of your choice.I have add water and drained the water in oats which i found best when tasted OR You can also add 1 1/2 cup of water to vegetables,bring it to boil till the vegetables are done ,then add dry roasted oats and cook for 5 min by closing the lid as we prepare semolina upma.
