Oats khichdi

Oats khichdi is a healthy and nutritious one-pot protein-rich dish made with lentils, oats, and veggies, a filling and comforting dish for any time of the day.
Ingredients:
Rolled oats – 1 cup
Moong dal – 1/2 cup
Cumin – 1 tsp
Ginger – 1 tsp grated
Asafoetida – 1 pinch powdered
Green chili – 1 chopped (optional)
Curry leaves – few
Onion – 1 chopped
Tomato – 1 chopped
Carrot – 1 chopped
French beans – 1/4 cup chopped
Green peas – 1/4 tsp
Turmeric – 1/4 tsp
Chilly powder – 1/2 tsp
Salt to taste
Coriander – 1/4 cup chopped
Oil – 2 tbs
Ghee to serve

Method:
Rinse and soak moong dal for 10 mins.
Keep all the ingredients handy to start,
Heat oil in a pressure cooker pan, when it is hot add cumin allow it to splutter,
Add chopped green chilies, grated ginger, curry leaves, chopped onion together with asafoetida, saute until you get a nice aroma for 5 mins on a medium flame, then add chopped tomato, saute until it becomes soft,
Add veggies, saute for few secs,
Then add rolled oats and moong dal, saute for 2 mins, add turmeric and chili powder, add 4 cups of water, add salt to taste.
Bring the mixture to boil, you can adjust the quantity of water to make it mushy or slightly grainy. on a medium flame, pressure cook for 1 whistle, then simmer for 5 mins on low flame and turn off the flame.
When the pressure of the cooker settles on its own, open the lid, add chopped coriander, give a good mix,
Serve hot with raita.
