Nippattu recipe

Nippattu is a traditional crunchy snack of karnataka, one of my favorite snacks. Nippattu are rice crisps made from rice flour, all purpose flour, butter, peanuts, roasted gram and spices which is irresistible in taste. It is a crispy and spicy snack which is prepared often for festivals like deepawali, Ganesha chathurthi and in traditional ceremony’s . It is easy to make recipe with simple ingredients.
Preparation time – 15 min
Cooking time – 30 min
Serves – 5 (makes 25 no’s)
Ingredients –
Rice flour – 2 cup
All purpose flour – 1 cup
Peanuts – 1/2 cup
Roasted gram – 1/2 cup
Sesame – 2 tbs
Butter – 100 gm
Green chilies – 4 finely chopped
Coriander leaves – 1 bunch chopped
Curry leaves – 1 spring chopped
Salt to taste
cooking soda – 1 pinch
Oil for deep frying
How to prepare or to make Nippattu –
Dry roast peanuts in a medium flame till crisp and allow it to cool.
Remove the skin and husk from roasted peanuts, crush them (not to be powdered just break them into pieces)
Add all the ingredients and combine flour,butter,nuts chopped ingredients, soda and salt in a bowl. Add little water and knead the mixture to a smooth dough like chapati dough. The dough should not be too soft or too hard.
Take a thick plastic sheet or butter paper. Smear and spread oil on the sheet. (This helps in removing nippattu from the sheet for deep frying). Take a small lemon sized ball from the dough and flatten it as thin as possible, on the sheet by hand to 3 inch size in diameter.
Heat oil in deep bottomed pan. When the oil becomes hot, gently remove the flattened discs and drop them in the oil. Take care not to overcrowd the pan while deep frying the nippattus. Deep fry on both sides till golden brown.
Remove the nippattus in an absorbent paper to remove the excess oil.
Crispy and delicious south Indian popular Nippattu are ready to be enjoyed. Store nippattu’s in an airtight container. It can be preserved up to a month.
