Mixed vegetable curry

Mixed vegetable curry is a healthy and delicious curry to enjoy with rice or roti’s, an easy to make recipe with simple ingredients, a coconut based curry prepared with Mangalore cucumber and other veggies turns to be very delicious rice side dish, a Mangalorean curry, a perfect side dish to serve with dosa, idli as well. Just try and enjoy.
Ingredients:
To cook –
Mangalore cucumber – 2 cup cut into cubes
Carrot – 1/2 cup
Beans – 1/2 cup
Potato – 1/2 cup
Sambar onion – 1 cup (peeled and cut into 2 pieces)
Pumpkin – 1 cup
Turmeric – 1/4 tsp
Tamarind – a small lemon sized ball
Salt to taste
To Grind –
Coconut – 1 cup (grated or chopped roughly)
Coriander – 1 1/2 tbs
Urad dal – 1 tsp
Green chilies – 4 no’s (adjust to your taste)
For seasoning –
Mustard – 1/4 tsp
Curry leaves – 1 or 2 springs
Oil – 2 tsp (preferably coconut oil)

Method:
Rinse veggies, cut them as shown in the above image, immerse in water and keep ready. Soak tamarind in hot water for 10 min, squeeze it and remove the waste from it, add veggies in a vessel, add tamarind juice, turmeric and salt with 1 cup of water, cook until done in a medium flame.
Meanwhile heat a pan by adding little oil in it, when it is hot fry urad dal until it turns to golden brown in colour, when it is done, remove and set aside, in the same pan add coriander fry until light brown.
Add coconut into a mixer jar, blend it until it gets powdered, then add fried ingredients with green chilies, blend it to a fine paste by adding enough water to blend.
Ensure the veggies is done, add grounded paste into it, combine it to a curry in consistency, add water if necessary. Bring it to boil for 5 to 6 min.
Heat oil in a tadka pan, when it is hot, add mustard seeds, allow it to splutter, add curry leaves, fry for a while, remove from the flame, add it to the curry.
Healthy and delicious mixed vegetable curry is ready to enjoy.
Note –
You can add any of your favorite vegetables to prepare this curry, do not skip onion in preparation as it enhances the taste of the dish,
You can use green chilies or red chilies in preparation.
