Masala Khichdi with Rice and Moong Dal

Masala Khichdi is a traditional rice dish, an easy to make recipe, healthy one pot nutritious meal prepared with rice, moong dal, and simple spices. Preparation of khichdi varies from region to region, this recipe is prepared especially around Bangalore-Mysore region, coconut is blended with aromatic spices which make the dish flavorful and tasty.
Ingredients:
Rice – 1 1/2 cup
Moong dal – 1 cup
Cumin – 3/4 tsp
Pepper – 1 tsp
Onion – 1 or 2 chopped
Tomato – 1/2 cup chopped
Green chilly – 3 no’s adjusted to your taste
Vegetable – carrot, cabbage, beans, potato – 1/2 cup each chopped
Coriander – 1 bunch chopped
Mint – 1/4 bunch chopped
Coriander powder – 1 tsp
Turmeric – 1/2 tsp
Chilly powder – 1 tsp (optional)
Salt to taste
Oil
To grind –
Coconut – 1/2 cup grated or chopped
Ginger – 1/2 inch
Garlic – 6 to 8 cloves
Clove – 4 no’s
Cinnamon – 2 small pieces

Method:
Keep all the above ingredients ready as shown in the above image. Add all the ingredients to grind in a mixer jar, blend it to a smooth paste and keep ready.
Heat oil in a pressure cooker pan, when it is hot add pepper allow it to pop, then add cumin seeds, fry until it starts to pop, add chopped green chilies saute for a while, add chopped onion fry until it turns translucent, once done add tomato saute until it becomes soft, add chopped veggies, saute
Add rinsed and drained moong dal, fry for a while, add coriander powder, turmeric powder, and chili powder, saute
Add grounded coconut paste, saute for 2 min until you get a nice aroma, Add 5 cup of water (Approximately 1:2 water) , add salt to taste stir, bring it to boil, check the taste, add salt if necessary, once the mixture starts to boil, add rinsed and drained rice into, stir, bring it to boil, once it begins to boil, close the lid of the cooker, cook on a low flame for 15 min. Once done remove from the flame.
When the pressure of the cooker settles down on its own, open the lid, fluff the rice.
Enjoy Aromatic Masala Khichdi with Coconut chutney or with onion, tomato raita.
